Ingredients

5 lbs yellow onions

3 Tbsp Spiceology X Meateater Gnome on the Range seasoning

1/2 cup brown sugar
-
1/4 cup apple cider vinegar

2 oz of whiskey or bourbon
-
2 tsp salt

Olive oil, as needed
Directions
Start by peeling all of your onions first, cutting them in half makes it easier to peel. Thinly slice your onions against the grain of the onion (the opposite way if you were going to cut rings) this helps your onion breakdown easier.
Add some olive oil to a large pan and heat to med/low heat and add in your onions. Slowly cook your onions down, being careful not to brown them too much at the start. Add in your salt.
Continue to cook, stirring them consistently so your onions cook evenly. After about 10-15 minutes add in 1 1/2 Tbsp of Spiceology X Meateater Gnome on the Range seasoning. Stir to incorporate.
If your onions start to dry out too much you can add some water in, a couple Tbsps at a time.
After 20-25 minutes make a well in the middle of the onions and add your bourbon or whiskey, give it a quick light to burn off the alcohol, being careful as there will be a small flame.
Add in your brown sugar, apple cider vinegar and remaining Gnome on the Range seasoning.
Continue to cook for around 15 minutes until your onions are jammy. Season to taste and enjoy this onion jam on burger, sandwich, or charcuterie boards!
