What Is Chipotle Powder?
Chipotle Powder is the result of grinding peppers from Central America and Mexico and offers a bright red with a slightly smoky finish. These peppers are smoke-dried to achieve their wonderful taste, and their use dates back to before Aztec times.
Chipotle peppers start out as very ripe, red jalapeños. This is when the pepper contains the most heat and also some of the best flavor. The peppers are picked and then are smoked using oak or even traditionally in Mexico, pecan wood. It is said around ten pounds of the red jalapeños once smoked and dried makes one pound of a dried chipotle pepper.
The smoking and drying process can range anywhere from 48 hours to a half of a week. The idea is that the pepper is shrinking, losing water content and concentrating in flavor. This and the flavor from the smoke is what makes the chipotle pepper so appealing.
How Chipotle Powder Can Be Used
