Bada Bing Dry Brined Parmesan Wings

Ingredients

  • 3 lbs chicken wings, thawed and defrosted 
  • The Grill Dads Italian Juicy Bird Dry Brine
  • 1 stick of melted butter 
  • 1/2 cup grated Parmesan cheese (and some for garnish)
  • 2 cloves of minced garlic 
  • 1 tablespoon local honey 
  • fresh Italian flat-leaf parsley for garnish

Instructions

For the Grill:

  1. 24 hours before serving, coat your wings in The Grill Dads Italian Juicy Bird Dry Brine
  2. . Once coated, place on a baking sheet and store in the fridge uncovered. 
  3. Preheat a gas grill to medium (about 350 degrees)
  4. Throw those wings on the grill. Grill ‘em up, flipping every couple of minutes for about 20 minutes
  5. Combine butter, cheese, honey and garlic in a bowl with wings. Toss and thoroughly coat.
  6. Place back on the grill and crisp for approximately 3 minutes.
  7. Put em on a plate and garnish with fresh parsley and parmesan. Enjoy!    

For the Oven:

  1. 24 hours before serving, coat your wings in The Grill Dads Badabing Dry Brine. Once coated, place on a baking sheet and store in the fridge uncovered. 
  2. Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil and top with an oven-safe cooling rack. Coat in non-stick spray. 
  3. Arrange the wings in a single layer on the sheet. Bake for 45 minutes or until crispy, brown on top. 
  4. Combine butter, cheese, honey and garlic in a bowl with wings. Toss and thoroughly coat. 
  5. Place back on the baking sheet and into the oven to crisp for approximately 3 minutes. 
  6. Put em on a plate and garnish with fresh parsley and parmesan. Enjoy!

Notes

Why this recipe is awesome 

It’s awesome because it’s sweet, salty and savory for people who want something different from the same-old-same-old traditional spicy buffalo wings. These wings are for anyone! And kids love them too! It’s a family and crowd favorite so you better make a double order.

EASY SWAP: Instead of using our dry brine (but why wouldn’t you?), you can combine garlic, onion powder, paprika, salt, sugar, crushed fennel and crushed red pepper and use that as a brine instead. But, we’d recommend using ours. We did all the hard work so you don’t have to. :)
