Greek Freak Chicken Gyro Salad

- 2 lbs Boneless Chicken Thighs
- 1 Head Red Leaf Lettuce
- 1 Head Green Leaf Lettuce
- 2 cups Cherry Tomatoes (split)
- 1/4 cup Red Onion (Thinly Sliced)
- 2 cups and 1 cup Plain Greek Yogurt
- 3 cups English Cucumber (small dice)
- 1/8 cup Fresh Squeezed Lemon Juice
- 2 Tbsp Spiceology Greek Freak Mediterranean Blend (now at Target!)
- 1/4 cup Kalamata Olives
- 1 cup Kosher Salt
- 2 whole Pita (cut into wedges)
- 1/3 cup Feta Crumbles
Instructions
- In a large plastic tub with lid, mix 2 Tbsp Spiceology Greek Freak with 2 cups of Yogurt and 2 lbs of boneless chicken thighs.
- Cover and refrigerate for a minimum 1 hour.
- Preheat grill to 480-500 degrees. – In a medium mixing bowl, combine 2 Tbsp of lemon juice, 1 cup of Yogurt, 1 tbsp of Spiceology Greek Freak, 1 tsp of salt, and 1 cup of diced cucumbers to make tzatziki sauce.
- Mix well and refrigerate for a minimum 1 hour. The longer it sits the better it gets.
- Remove chicken from the fridge and grill until chicken thighs reach 160 degrees internally.
- Remove the thighs from the grill and rest for 10 minutes before slicing.
- Build salad and top with tzatziki and enjoy!
