Tomatador PLT Sandwich

Ingredients
- 2 Tbsp Spiceology Tomatador
- 2 Campo Grande Pork Jowl Secreto Steaks
- 1 Crusty Spanish or Italian Round Loaf (sliced)
- 2 Heirloom Tomatoes Large (sliced)
- 2 heads Red and Green Leaf Lettuce
- Duke’s Mayo, as much as you want
- 1 Large red onion (small dice)
- 3/4 cup Brown Sugar
- Graza Sizzle Olive Oil, have the squeeze bottle on hand
- 3/4 cup DeSpana Sherry Vinegar
- Kosher Salt to taste
Instructions
- Preheat oven to 400 degrees. – Rub Campo Grande Pork Jowl Secreto with Spiceology Tomatador on all sides and set aside.
- In a mediem sauté pan, heat Graza drizzle and sauté diced red onion to a roasted medium brown approx 7-9 minutes over medium high heat. Sprinkle with salt and deglaze the pan with DeSpana Sherry Vinegar. Add brown sugar and mix well. Reduce heat to medium-low and simmer until onions are reduced by half. Remove from heat and rest.
- In a cast iron skillet, bring another 2 tbsp of Graza Sizzle up to medium high heat. Sear Secreto 3 minutes per side and transfer on a small cookie sheet to the oven.
- Roast in the oven for five minutes then remove from the oven and rest for ten minutes.
- Heat 1 tbsp of Sizzle in a medium/large sauté skillet and toast sandwich slices on both sides.
- Thinly slice the Secreto, apply mayo to one side of a slice of toasted bread and onion jam to the other slice. Assemble the Pork Secreto, sliced heirloom tomato, red and green lettuce leaves, and sauced bread.
