Korean BBQ Smoked Side of Salmon

Ingredients

  • 1 Side of Fresh Salmon from Costco
  • 3 Tbsp Spiceology Korean BBQ Blend from Costco
  • 1/2 cup Mirin
  • 1/3 cup Rice Vinegar
  • 1/4 cup Hoisin

Instructions

  1. In a medium mixing bowl combine mirin, rice vinegar, hoisin, and Spiceology Korean BBQ seasoning.
  2. Place the salmon in a large casserole dish and pour marinade over top. Flip the salmon over skin side up and wrap in plastic wrap. Refrigerate for 8-12 hours.
  3. Preheat smoker to 225 degrees F.
  4. Place salmon on the smoker and smoke for 3 1/2 hours or until internal temp reaches 135 degrees F.
  5. Remove from the smoker and rest for 15 minutes.
  6. Serve and enjoy the fruits from your Costco haul!
