APPLE CINNAMON BANANA MUFFINS

- 1 3/4 cup flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- Preheat oven to 350°F.
- Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt. Set aside.
- Mix together eggs, mashed bananas, sugar, shortening, and Apple Cinnamon Seasoning. Add chocolate chips and nuts if desired. Fold in flour mixture and mix until smooth. Scoop into muffin tins.
- Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean.
