Ingredients

.5 lbs ground beef

.5 lbs ground pork

1 egg

2 egg yolks

1 Tbs vegetable oil

5 oz Serrano ham

2 cups stale ciabatta bread, cubed

4 fl oz jamon stock
-
56 oz (can) roasted chopped tomatoes

1 small yellow onion, minced
-
6 garlic cloves, sliced

2 Tbs tomato paste
-
2 fl oz red wine
-
4 fl oz jamon stock

2 Tbs Spiceology Greek Freak

2 oz jamon Iberico, diced (We use Campo Grande. You can also use Serrano ham)

1 cup cold water

Parsley, chopped

Parmesan, grated

Directions
Preheat the oven to 375 degrees.
Make the Jamon Stock
Add 1 cup of water and the diced jamon (or serrano ham) to a small pot and bring to a boil.
Remove from the heat and let the jamon stock steep until ready to use.
Make the Meatball Bread Mixture
In a sauté pan, sweat about ¼ of your onions. Once onions are translucent, add 2 sliced garlic cloves and cook until fragrance. Make sure not to burn the garlic.
Add 1 oz red wine and 4 fl oz of jamon stock and simmer to reduce by half.
Remove from the heat and mix in your stale ciabatta bread cubes and let cool.
Make the Tomato Sauce
In a separate sauté pan, sweat your remaining onion until translucent and then add remaining sliced garlic.
Once fragrant add tomato paste and stir to caramelize the paste until a deep red. Add remaining red wine and stir.
Add 1 Tbs Spiceology Greek Freak, chopped tomatoes, and remaining jamon stock.
Bring this mixture to a simmer stirring occasionally.
Discard the rosemary and puree the mixture in a blender. Set aside.
It's Meatball Time
Mix together the ground beef and pork, serrano ham, bread mixture and remaining Spiceology Greek Freak. Mix well and turn into 1 oz meatballs on a cookie sheet. Set aside.
Add vegetable oil to a cast iron pan and heat until 350 degrees. Fry the meatballs for 3-5 minutes until golden brown.
Place the meatballs in a 9x13 pan and cover with the tomato sauce, cover with foil and bake for 45 minutes
Plate and garnish with chopped parsley and grated parmesan. Enjoy.
