Berbere is a bold combo of paprika, ginger, coriander, cumin, nutmeg, and a variety of other spices that delivers a profile that’s both spicy, sweet, and slightly citrusy. Ingredients

4-5-bone rack of beef ribs

As needed (roughly 2 Tbsps per side) Spiceology Berbere seasoning

2 Tbsp Soy sauce, 1 Tbsp per side as a binder

3-4 Tbsp of beef tallow or butter

Your favorite bold bbq sauce, as needed
Directions
Pre heat your smoker or pellet smoker to 250°F with a strong flavor of wood/pellets such as mesquite.
Season your beef ribs with soy sauce first then your Berbere seasoning on all sides liberally.
Smoke with the 3-2-1 method. Smoke for 3 hours uncovered.
After 3 hours, check your internal temp, it should be around 165°F, if so wrap your ribs in parchment paper or aluminum foil with bbq sauce, beef tallow or butter and more Berbere seasoning. Place back on your grill and smoke for 2 hours.
After 2 hours remove paper or foil and smoke uncovered for 1 hour, or until 203°F is reached, here you can add bbq sauce if you’d like or keep them dry, dealers choice.
