Ingredients

1.5 - 2 pounds green beans

1 pound cremini mushrooms, minced

8 oz shiitake mushrooms, minced

2 yellow onions, minced

5 garlic cloves, minced

2 tablespoons Black & Bleu Seasoning

5 shallots, sliced
-
3 tablespoons unsalted butter
-
2.5 cups milk
-
2.5 cups heavy cream
-
4 oz parmesan cheese, shredded
-
4 oz gruyere cheese, shredded

2-3 tablespoons all-purpose flour

Oil, as needed

Breadcrumbs, as needed

Salt, to taste

Pepper, to taste
Directions
Chop or pulse the cremini and shiitake mushrooms in a food processor until finely minced.
Preheat a large pan over medium heat with a few tablespoons of oil. Add mushrooms and cook for about 15 minutes, stirring often, until deeply browned.
Add butter, onions, garlic. Sauté on medium heat until onions are translucent, around 5 minutes.
Sprinkle flour into the pan and cook 3 minutes, stirring. Add a splash of milk/cream to deglaze, then add the remaining milk and cream.
Add Black & Bleu Seasoning and simmer for 20 minutes to thicken.
Gradually add parmesan and gruyere cheeses, stirring bit by bit. Taste and adjust seasoning with salt and pepper.
Combine sauce with blanched green beans in a casserole dish. Mix well.
Preheat oven to 350°F. Top casserole evenly with breadcrumbs. Bake about 15 minutes, until breadcrumbs are golden.
Heat oil in a skillet to 350 degrees. Fry shallots until golden and crispy. Drain on paper towels, season with salt and pepper.
Top baked casserole with fried shallots and serve hot.
