Ingredients
2 Tbsp Spiceology Black Magic Cajun Blackening Blend
2 cups Whole Milk
1 cup Dark lager or light lager
4 cups Sharp White Cheddar (shred fresh yourself)
3 cups Pecorino Romano or Mozzarella (shred fresh yourself)
1/4 cup Butter
1/4 cup AP Flour
2 Tbsp Spicy Brown Mustard
2 tsp Worcestershire Sauce
2 Tbsp Your Favorite Hot Sauce
1/2 cup Green Onions (sliced)
1 Tbsp Kosher salt
Directions
In a medium stockpot or Dutch oven, melt butter and add flour to create a roux. Add mustard, Worcestershire, hot sauce, and black magic to the roux and cook for 2-3 minutes on medium low heat.
Add 1 cup of milk and begin to thicken the roux.
Slowly add 1 cup of beer and whisk thoroughly. As sauce begins to tighten up, add remaining cup of milk.
Bring to a light boil, reduce heat to low and add 1/2 the cheese. Slowly fold in the cheese gently. Whisk until smooth, add remaining cheese and 1 tbsp of salt.
Whisk until fully melted and incorporated. Add 1/4 cup of sliced green onions.
Reduce heat to simmer stirring occasionally.
Ladle into a bowl or remove from heat, add remaining green onions and serve with your favorite party side or game day chips and pretzels.
