Ingredients

12 oz andouille sausage, sliced ½-inch

1 Tbsp olive oil

1 Tbsp unsalted butter

4 cloves of garlic, minced

2.5 Tbsp Spiceology Black Magic Seasoning

1 Tbsp tomato paste

½ cup heavy cream
-
¼ cup chicken stock
-
1 cup parmesan cheese, grated + extra for garnish

¼ cup sun-dried tomatoes, sliced

6 oz orecchiette pasta
-
2 Tbsp Kosher salt
-
Black pepper, to taste

Red pepper flakes (optional)

½ cup - 1 cup reserved pasta water

Fresh parsley or basil, chopped
Directions
Bring a large pot of water to a boil. Add kosher salt and cook orecchiette until al dente. Reserve 1 cup pasta water, then drain.
Heat olive oil in a large skillet over medium-high heat. Add andouille sausage and sear until well-browned and rendered, 4–5 minutes.
Remove sausage from pan and set aside, leaving rendered fat in the skillet.
Reduce heat to medium. Add butter to the skillet and allow to melt.
Add garlic and sauté until fragrant, about 30 seconds.
Stir in tomato paste and cook for 1 minute to slightly caramelize.
Add Black Magic seasoning and black pepper; stir to bloom spices in the fat.
Pour in heavy cream and chicken stock, whisking to combine. Bring to a gentle simmer.
Add parmesan cheese and sun-dried tomatoes. Simmer until sauce thickens slightly, 3–4 minutes.
Return browned andouille sausage to the pan and stir to coat in sauce.
Add cooked orecchiette directly into the sauce and toss to combine.
Add reserved pasta water as needed, a little at a time, to loosen sauce and improve cling.
Taste and adjust seasoning with additional Black Magic or red pepper flakes if desired.
Serve hot, garnished with fresh herbs and extra parmesan.
