The tequila soleil is - dare we say - having a moment that we hope never ends.
Chef Christian gives this terribly drinkable cocktail a Spiceology spin with our Blackberry Balsamic blend that has that wonderful rich tang.

- 1 Tbsp Spiceology Blackberry Balsamic blend
- 1 cup Sweet Red Vermouth
- 1 cup Port Wine
- 2/3 cup White Sugar
- 1/2 oz Tequila (reposado)
- 1/2 oz Aperol
- 1/2 oz Blackberry Balsamic "Shrub"
- 6 oz Session IPA or Pale Ale

Directions
- In a small saucepan, combine Blackberry Balsamic, Port Wine, white sugar, and Sweet Red Vermouth. Bring to a light simmer just to dissolve and combine ingredients.
- Transfer "shrub" into a mason jar or plastic tub with a tight seal and chill in the freezer to super cool quickly.
- In a high ball glass, layer tequila, Aperol, and your Blackberry Balsamic "shrub". Slowly pour 6oz of ice cold session IPA into the high ball glass.
- Slowly fill glass the rest of the way to the top with ice and float a touch of BB "Shrub".
