Double Garlic Adobo Chicken Fried Rice

The iconic Filipino Adobo Chicken and Garlic Fried Rice seared to crispy perfection on a flattop griddle. Tangy umami-rich adobo inspired marinaded chicken elevated with garlic infused rice is sure to stop hunger in its tracks.

Ingredients

2 tsp and 2 tsp Spiceology’s Double Garlic

2lbs Boneless Skinless Chicken Thighs

3 cups Day Old White Rice

2 tbsp Soy Sauce

¼ cup White Vinegar
-
1/8 cup Brown Sugar
-
4-6 Garlic Cloves (thinly sliced)

1/8 cup Chives (thinly sliced)
Directions
In a medium mixing bowl combine 2 tsp of Spiceology's Double Garlic, soy sauce, white vinegar, and brown sugar. Whisk to combine.
In a large Ziploc storage bag, combine Double Garlic marinade and chicken thighs. Seal and massage marinade into chicken thighs. Place in the fridge to marinate over night.
Preheat flattop to 400 degrees. Add 2 tbsp of neutral high smoke point oil
On one portion of the flat top, start cooking chicken thighs. Sear on each side approximately 3 minutes per side. Once internal temp of thighs reaches 160 degrees, set chicken aside to rest.
Add 2 more tbsp of high smoke point oil and sauté garlic for one minute.
Add day old dry cooked white rice to the garlic and flip and toss as it will cook quickly.
Add 1 tbsp of oil and 1 tbsp of Double Garlic blend. Continue to work rice on the flat top until all ingredients are incorporated evenly.
Remove from heat, slice chicken and place on top of rice. Garnish with chives and enjoy.

The key to any great fried rice made at home is day old dry white rice. You want the rice to absorb the liquids and flavors you impart during the stir fry process so old cold white rice is always the answer.
