Greek Freak One-Pan Cheesy Chicken, Broccoli & Rice

Ingredients

2 chicken breast, diced into 1-inch chunks

2 1/2 tbsp Spiceology Greek Freak Mediterranean seasoning

1 medium crown of broccoli, cut into bite-sized pieces

1 small yellow onion, diced

3 cloves of garlic, thinly sliced

1 1/2 cups of rice
-
2 cups of chicken stock

1/2 cup heavy cream
-
2 cups shredded cheddar cheese

Olive oil, as needed
Directions
Season your chicken with 1 Tbsp of olive oil and 2 Tbsp of Spiceology Greek Freak, and mix.
Heat a large pan to medium high heat with olive oil, add your chicken and brown on all sides (it doesn’t have to be cooked all the way through at this point) remove your chicken and cook your onion and garlic for 2 minutes.
Add in your rice and toast for 2 minutes.
Add in a small amount of your chicken stock to de glaze your pan, then add in the rest of your stock.
Add in your cream, chicken and 1 cup of cheese. Cook over medium low heat for 15-18 minutes, or just until your rice is almost cooked through.
Top with your broccoli, season with more Spiceology Greek Freak and add in the rest of your cheese, cover and let steam for 5-7 minutes until your broccoli is cooked through.
