Ingredients

1½ lb cod fillets

½ cup salted pistachios, finely crushed

1 Tbsp Spiceology Greek Freak seasoning

2 Tbsp Dijon mustard

2 Tbsp olive oil
Directions
Pat cod dry and portion into four 6 oz portions.
In a bowl, mix crushed pistachios with Greek Freak seasoning.
Brush the top of each cod fillet with Dijon mustard.
Press pistachio mixture firmly onto the mustard-coated side of each fillet.
Heat olive oil in a skillet over medium heat. Place cod crust-side down and sear 3–4 minutes until golden and set.
Flip carefully and cook for another 3–5 minutes, until the fish reaches 145°F internal temperature.
Remove from heat and rest briefly before serving.
