King of the Hill BBQ Sheet Pan Fajitas

Ingredients

  • 2-3 chicken breasts or 5-6 chicken thighs
  • 1 medium yellow onion
  • 1 green and red bell pepper
  • 3 Tbsp Spiceology’s King of the Hill BBQ rub
  • Flour tortillas
  • Shredded cheese, as needed
  • Olive oil, as needed
  • Salt, pepper and garlic powder, as needed. 

Directions

  1. Preheat your oven to 425°F
  2. Slice your chicken thinly, place on your sheet pan with some parchment paper and season with olive oil and 2 Tbsp of Spiceology King of the Hill seasoning.
  3. Slice your onion and peppers about 1/2 inch thick, add olive oil, and season with remaining Tbsp of Spiceology King of the Hill seasoning, salt, pepper, and garlic powder.
  4. Add your chicken and onions onto the sheet pan and bake for 15 mins or until your chicken is fully cooked.
  5. Once your chicken is fully cooked, remove it from the pan and add your peppers, return to the oven and bake for another 15-20 mins until your veggies are fully cooked and some charring has occurred.
  6. Heat your tortillas in a pan and add your cheese until melted. Fill your cheesy tortillas with chicken, peppers and onions for a quick and easy weekday meal.
