For the Onion Jam
Directions
In a bowl, mix ground beef with salt, black pepper, and ⅜ tsp (about half) Mesquite Peppercorn Lager Blend. Form into 3 slider patties.
Meanwhile, melt butter and olive oil in a small pan over medium heat. Add sliced onions and cook slowly for 8–10 minutes until translucent and lightly golden.
Stir in brown sugar, balsamic vinegar, lager beer, and remaining Mesquite Peppercorn Blend. Simmer, stirring often, until onions are jammy and the liquid reduces (6–8 minutes). Add water only if needed to loosen.
Mix mayonnaise and Dijon mustard in a small bowl. Toast slider buns lightly.
Heat skillet or flat-top to medium-high. Cook patties for 2-3 minutes per side. Add cheese in the final minute to melt.
Assemble sliders: bottom bun → mayo-mustard → cheesy patty → spoonful of lager onion jam → arugula → top bun.
Serve warm. Perfect pairing: crisp lager or lightly smoked amber ale to mirror the mesquite and beer flavors.
