Holding it down in the Big Game Burger Series, this New England Steamed Cheeseburger plays a disciplined, no-flash game plan—American cheese melted tight to the beef, buttery onions soft and sweet, and a pretzel bun steamed just enough to turn glossy and tender. It’s understated, efficient, and quietly dominant… the kind of burger that doesn’t celebrate early, just wins possession by possession, beef patty by beef patty and lets the scoreboard do the talking.

1 La Brea Bakery Pretzel Bun

Spiceology Greek Freak seasoning

1 beef burger patty (6 oz)

2 slices American cheese
-
½ cup diced yellow onion

4 tbsp unsalted butter, divided (2 tbsp for onions, 2 tbsp for bun)

Salt and black pepper, to taste

Griddle or skillet (cast iron preferred)

Small pan for onions

Steamer basket + pot OR covered pan + 1–2 tbsp water

Directions
Preheat: Heat a skillet or griddle over medium-high heat. Prepare your steamer setup.
Toast the Bun: Butter the cut sides of the pretzel bun and toast for 1–2 minutes until golden. Set aside.
Cook the Onions: Melt 2 tbsp butter in a small pan. Sauté onions for ~5 minutes until translucent. Season with a pinch of salt and Spiceology Greek Freak seasoning. Remove from heat.
Sear Burger & Melt Cheese: Season the patty with salt and pepper. Sear for 3–4 minutes on the first side, flip, and cook for 2–3 minutes. Add cheese and a light dusting of Spiceology Greek Freak. Cover the pan for 30–60 seconds to melt the cheese.
Build & Steam Finish: Build the burger starting with the bottom La Brea Bakery Pretzel Bun, followed by the cheesy patty and the buttery Spiceology Greek Freak onions. Add the top bun. (Chef’s Tip: Don’t over-steam, as pretzel buns turn soggy fast. )
Final Steam: Place the fully assembled burger into your steamer setup for 1½–2 minutes until the pretzel bun is soft and glossy. Serve immediately.
