2 packs of Silver Fern Farms 100% Grass-fed New Zealand New York Strip Steaks (10 oz each)

1/2 teaspoon Spiceology Blackberry Balsamic spice blend
- 1 teaspoon kosher salt

1 teaspoon coarse black pepper
- 2 teaspoons olive oil

2 teaspoons Spiceology Blackberry Balsamic spice blend
- 1 tablespoon shallots
- 2 cups blackberries
- 2 tablespoons orange liqueur
- 2 tablespoons water
- 2 tablespoons butter
- Pinch of salt and pepper
- 1 tablespoon fresh thyme, chopped

Seared New York Strip Steaks:
Season the steaks with salt, pepper and Spiceology Blackberry Balsamic spice blend. Heat a cast-iron skillet over medium-high heat. Add 2 teaspoons olive oil to the skillet.
- Place the steaks in the pan. Sear for 3-4 minutes. Flip. Cook another 3-4 minutes until medium-rare. Turn the steaks on their sides and sear the edges for another minute per side.
- Remove the steaks and cover with foil to keep warm.
Boozy Balsamic Blackberries:
Add the shallots to the skillet and sauté for 30 seconds. Add the blackberries and liqueur. Carefully, light the liqueur with a lighter and flambé the berries, stirring until the flame subsides.
Stir in water, Spiceology Blackberry Balsamic spice blend and butter. Continue cooking, until the sauce has thickened. Season with salt and pepper to taste. Stir in fresh thyme.
- Slice the steaks and top with the boozy balsamic blackberries and blue cheese.
