Ingredients

1 Chicken Breast

2 cups Breadcrumbs
-
2 cups All-Purpose Flour
-
2 Eggs
-
1/4 cup marinera sauce (we used Rao's Arrabbiata sauce)

4 thin slices fresh Mozzarella
-
3 Tbsp Spiceology Pizza+ Blend
-
6 oz Bucatini 6oz
-
Fresh basil garnish
-
1 quart canola oil
Directions
Butterfly your chicken breast and flatten as much as you can on a plastic wrapped-lined cutting board.
Have three separate bowls ready: one for breadcrumbs, flour and eggs (beaten). Season the flour and breadcrumbs with a tablespoon each of Spiceology Pizza+ blend.
With your chicken breast in two pieces place one in the flour and dredge both sides. Then dunk both sides in the eggs, back to the flour and then press into the breadcrumbs.
Set on a wire rack in a sheet tray or a parchment-lined sheet tray.
In a walled frying pan, bring your canola oil to 375 degrees.
Bring your oven to 500 degree on broil.
Cook your bucatini in a pasta pot until al dente. Drain and dress with olive oil to avoid sticking.
Fry your chicken on each side until golden brown and 160 degrees internal temp.
Spread the arrabbiata sauce evenly between the two pieces of fried chicken sprinkle 1bspT of the Pizza+ blend evenly over the two and top with two mozzarella slices each.
Place in oven broiler for 3-5 minutes or until the cheese has melted and browned.
Remove from oven and plate your pasta and place the chicken over the pasta and garnish with parmesan and fresh basil.
