Pizza Zuppa Toscana

Ingredients

  • 1 lb jowl or thick-cut bacon

  • 1 lb ground Italian sausage

  • 2 cups small-diced white onion

  • ⅛ cup thinly sliced fresh garlic

  • 6 cups halved mini gold potatoes

  • 1 qt chopped kale, washed

  • 10 cups chicken stock

  • 1 cup heavy cream

  • ⅛ cup Spiceology Pizza Seasoning (plus extra to taste)

  • Neutral oil (as needed)

Directions

  1. In a large stockpot, cook bacon until mostly crisp but still tender. Remove and drain.

  2. Add 1 Tbsp neutral oil, then brown sausage. Remove and drain with bacon.

  3. Add onions, garlic, and 2 Tbsp Pizza Seasoning to the pot. Sauté until fragrant and translucent.

  4. Pour in chicken stock. Return sausage and bacon to the pot with potatoes. Bring to a boil.

  5. Reduce to medium-low and simmer 30 minutes, stirring in another Tbsp Pizza Seasoning halfway through.

  6. Add kale, simmer 5 minutes, then stir in cream.

  7. Ladle, serve, and remember—when you’re here, you’re here.
