This quick-to-throw-together salad is the perfect light and zingy side dish.
Use whatever seasonal veggies you have on hand or in the garden and get to chopping.
Our all-purpose and beet root-based Purple Haze blend adds some great complex earthy flavor that helps the veggies' true flavor shine.

- 4 small or 1 large cucumber
- 4 oz cherry tomatoes
- 1/2 medium red onion
- 1/4 cup, feta

1 tbsp Spiceology Purple Haze
- 1 tbsp balsamic vinegar
- 2-3 tbsp olive oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- Salt, to taste
- Fresh basil, optional
Directions
- Chop your vegetables, slicing cucumbers on the bias, half tomatoes and dice onion.
- Season with balsamic, olive oil, lemon juice and zest, add in Spiceology Purple Haze and mix.
- Add feta and basil if using, season with salt and serve chilled.
