Raspberry Chipotle No-Bake Personal Cheesecakes

It doesn't need to be Valentine's Day to make these personal Raspberry Chipotle No-Bake Cheesecakes (but they do make a pretty great dessert for you and yours on Valentine's Day). Watch the recipe video below!

Ingredients

1/2 cup chocolate cookie crumbs

2 Tbsp melted butter

2 Tbsp Spiceology Raspberry Chipotle seasoning, divided

1/4 fresh raspberries, cut in half

2 tsp sugar 8 oz / 1 block of regular cream cheese
-
1/2 cup heavy cream
-
1/4 cup powdered sugar
-
1 tsp vanilla paste or extract
-
1-2 Tbsp raspberry jam
Directions
Combine your chocolate cookie crumbs and butter together with 1/2 tsp of Spiceology Raspberry Chipotle seasoning, place into your containers (you can make 1 cheesecake or a couple smaller ones) and lightly press into the bottom, bake the crusts at 350°F for 7 minutes.
Slice your fresh raspberries in half, mixing in 1 tsp of Spiceology Raspberry Chipotle seasoning and 2 tsp of sugar, let stand for 15 minutes.
In the bowl of a stand mixer, add in your cream cheese, heavy cream, icing sugar and vanilla. With the whisk attachment, mix on medium/high for 4-5 minutes, until light, fluffy and no lumps are left.
Add in 2 tsp of Spiceology Raspberry Chipotle seasoning and your fresh raspberries, and fold in gently, trying to not break the fresh raspberries.
And your cheesecake mix into your cooled crust containers and level them out. Place the raspberry jam on top and swirl into your cheesecakes.
Cover and place in the fridge for at-least 4-5 hours to set or overnight. Top with more fresh raspberries and enjoy this delicious dessert!
