Ingredients

2-4 Russet potatoes

2-3 Tbsp Spiceology Rosemary Dijon blend

1/4 cup butter, melted

2 cloves of fresh garlic, or 4-5 cloves of roasted or confit garlic

Olive oil, as needed

Salt, as needed

Optional, green onions and parsley for topping.
Directions
Pre-heat oven to 400°F.
Carefully slice your potatoes, making sure not to slice all the way through. Make as many slices and you can.
Add olive oil to your potatoes and coat all sides, and do the same with 2 tsp of Spiceology Rosemary Dijon seasoning per potato.
Bake for 15 minutes.
While your potatoes are baking, make a quick garlic butter with your melted butter, 1 Tbsp Spiceology Rosemary Dijon and garlic.
After 15 minutes remove your potatoes and add some of your garlic butter to the tops of the potatoes. Put back into your oven and continue cooking for 15-20 mins or until cooked through.
Take your potatoes out top with parsley and green onions (if using) and enjoy warm.
