2 cups finely chopped Costco rotisserie chicken

2 tsp Spiceology Smoky Honey Habanero Seasoning

½ cup shredded Monterey Jack or mozzarella

¼ cup sliced scallions

8 egg roll wrappers

Neutral oil spray or brush (for baking)

2 cups honey

½ cup brown sugar

¼ cup apple cider vinegar

¼ cup unsalted butter
-
½ cup water

4 Tbsp Spiceology Smoky Honey Habanero Seasoning

½ tsp Kosher salt

Directions
Egg Rolls
Preheat the oven to 400°F (or prepare a fryer at 350°F).
In a bowl, mix chicken, Smoky Honey Habanero seasoning, cheese, and scallions.
Place about ¼ cup filling in each egg roll wrapper and roll tightly, sealing edges with water.
Arrange seam-side down on a lined baking sheet and lightly spray or brush with oil.
Bake for 15–18 minutes, turning once, until golden and crisp (Alternatively, fry 3–4 minutes until crispy).
Serve hot with ranch or sweet chili sauce lightly drizzled with honey, if desired.
Dipping Sauce
Add everything to a small saucepot and simmer until thickened.
