Smoky Honey Habanero Corn Flake Cookies

White chocolate melting into caramelized cornflake crunch, butter-rich dough barely holding it together, and a smoky honey heat that sneaks up late. These taste like dessert that knows it’s better than everything else on the table.

Ingredients
1 box of 340g (12oz) cornflakes
½ cup milk powder
3 Tbsp sugar
1 tsp salt
2 Tbsp Smoky Honey Habanero (plus more for finishing)
Butter, melted (from cookie butter below, divided as needed)
- Cookie Dough
225 g butter, room temperature
250 g white sugar
150 g brown sugar
1 egg
1 tsp vanilla extract
1½ cups all-purpose flour
½ tsp baking powder
¼ tsp baking soda
5 g salt
6 oz white chocolate, chopped or chips
Directions
Preheat oven to 275°F.
Crush cornflakes to about ¼ their original size—you want texture, not dust.
In a large bowl, combine crushed cornflakes, milk powder, sugar, salt, and 2 Tbsp Smoky Honey Habanero.
- Add a light pour of melted butter (just enough to coat). Mix well.
Spread evenly on a sheet tray and bake 20 minutes, stirring once halfway.
- Cool completely.
Cream the Dough In a stand mixer, cream butter, white sugar, and brown sugar on medium speed 2–3 minutes.
Add egg and vanilla. Increase speed and mix 7–8 minutes until pale, fluffy, and nearly doubled in volume.
- Scrape sides as needed.
With mixer on low, add flour, baking powder, baking soda, and salt.
Mix just until combined, about 45 seconds.
Fold in chopped white chocolate and cooled cornflake crunch until evenly distributed.
5. Chill Portion dough into ~50 g balls.
Refrigerate at least 1 hour (longer = better structure).
Preheat oven to 375°F.
Bake cookies 10–12 minutes, until edges are set and lightly golden but centers stay soft.
Finish warm cookies with flaky salt and a light dusting of Smoky Honey Habanero.
