These roasted carrots hit that sweet-heat sweet spot with zero fuss. Blanching keeps them tender inside, while a hot oven brings out caramelized edges and depth. Finished with butter and Spiceology Smoky Honey Habanero Seasoning, they balance gentle smoke, honeyed sweetness, and a warm chile kick—proof that a simple vegetable side can still bring serious flavor to the table.

Ingredients
2 lb carrots, peeled and left whole (larger carrots slice in half)
3 Tbsp unsalted butter, melted
1 Tbsp Spiceology Smoky Honey Habanero
Garnish: 1 Tbsp fresh parsley, chopped

1–2 tsp honey or maple syrup for extra sweetness
¼ cup feta or Parmesan to finish
Swap butter for olive oil or vegan butter for vegan
Directions
Bring a pot of well-salted water to a boil. Blanch carrots 3–4 minutes until just tender. Shock in ice water, drain, and pat dry.
Toss carrots with melted butter, Smoky Honey Habanero seasoning, black pepper, and salt if needed.
Spread in a single layer on a sheet pan.
Roast at 425°F (218°C) for 18–25 minutes, turning once, until caramelized.
Finish with herbs or a squeeze of lemon if desired.
