Smoky Honey Habanero Roasted Carrots

Ingredients

  • 2 lb carrots, peeled and left whole (larger carrots slice in half)

  • 3 Tbsp unsalted butter, melted

  • 1 Tbsp Spiceology Smoky Honey Habanero

  • Garnish: 1 Tbsp fresh parsley, chopped

Directions

  1. Bring a pot of well-salted water to a boil. Blanch carrots 3–4 minutes until just tender. Shock in ice water, drain, and pat dry.

  2. Toss carrots with melted butter, Smoky Honey Habanero seasoning, black pepper, and salt if needed.

  3. Spread in a single layer on a sheet pan.

  4. Roast at 425°F (218°C) for 18–25 minutes, turning once, until caramelized.

  5. Finish with herbs or a squeeze of lemon if desired.
