2 lbs Chicken wings (flats & drums)

1 Tbsp Olive oil

1 Tbsp Baking Powder

1 1/2 Tbsp Spiceology X Derek Wolf Sweet Carolina Blonde Blend

1/2 tsp Kosher salt

1/4 tsp Cracked black pepper

3/4 cup Blonde ale (beer)

1/4 cup Apple cider vinegar
-
2 Tbsp Yellow mustard
-
2 Tbsp Dijon mustard
-
3 Tbsp Honey
-
3 Tbsp Brown sugar
-
2 tsp Worcestershire sauce

1 1/2 Tbsp Spiceology X Derek Wolf Sweet Carolina Blonde Blend (for glaze)

1 Tbsp Butter Chives, as desired for garnish
Directions
Preheat oven to 400°F. Prep the wings: Pat chicken wings dry with paper towels.
Season: In a large bowl, toss wings with olive oil, baking powder, Sweet Carolina Blonde blend, salt, and pepper until evenly coated.
Arrange for roasting: Place wings on a parchment-lined sheet pan fitted with a wire rack, spacing them evenly so air can circulate.
Roast: Bake for 30 minutes, flipping halfway through, until the skin is golden brown and crispy.
In a saucepan, combine blonde ale, apple cider vinegar, yellow and Dijon mustards, honey, brown sugar, Worcestershire sauce, and Sweet Carolina Blonde blend. Simmer 8–10 minutes over medium heat, stirring occasionally, until thickened and reduced slightly.
Finish glaze: Whisk in butter until melted and glossy. Adjust seasoning with a pinch of cayenne or chili flakes if desired.
Glaze the wings: Toss hot, crispy wings in the warm glaze until evenly coated. Return to oven for 5 minutes to set the glaze and internal temperature is 185 degrees
Serve: Garnish with chopped green onions or parsley and serve immediately.
