Ingredients

1 whole chicken (or whatever pieces of chicken you’d like to use)

1 cup plain yogurt

3 Tbsp Spiceology Tandoori Glory seasoning

3 cloves garlic
-
1-inch knob of ginger
-
1 lemon
-
4 Roma tomatoes
-
1 medium yellow onion
-
Salt and pepper to taste

Coconut rice and naan for serving
Directions
Pre heat your oven to 375°F.
If using a whole chicken, remove the back and spatchcock it.
Mix together your yogurt, and 2.5 Tbsp of Spiceology Tandoori Glory seasoning along with grated fine garlic, ginger and lemon zest and juice of half the lemon.
Salt your chicken on all sides and rub in your yogurt mix all over also. You can let this rest in the fridge, uncovered for 2-4 hours.
Large chop your tomatoes and onion, season with olive oil salt and pepper or Spiceology’s double garlic.
Place everything onto a large sheet pan with parchment, roast for 40-45 minutes or until your chicken is cooked to 160-165°F.
Serve your roast chicken with the roasted tomatoes and onion, some coconut rice and naan.
