Golden-fried chicken gets a bold boost from Spiceology’s Yum Yum Blend, then is stacked on a soft bun with fresh veggies and a creamy, tangy Yum Yum sauce. Ingredients

4 boneless chicken thighs or breasts (4-5 oz each)

1 tablespoon hot sauce

3 tablespoons (divided) of Spiceology’s Yum Yum Seasoning

1 cup all-purpose flour

¼ cup cornstarch

1 tsp baking powder
-
½ tsp salt
-
Vegetable oil for frying

4 brioche or potato buns
-
Pickles for topping (optional)

8 slices of tomatoes
-
4 leaves of lettuce
-
½ cup mayo
-
1 tablespoon rice vinegar
-
1 tsp honey
-
1 tsp soy sauce
-
1 tsp Sriracha or chili paste (optional)

Directions
Make the Chicken
Marinade chicken thighs with 1 Tbsp of the Yum Yum Seasoning and hot sauce (we used Tabasco).
In a shallow bowl, mix flour, cornstarch, baking powder, salt, and another 1 Tbsp Yum Yum Seasoning.
Dredge chicken from marinade into dry mix, pressing firmly for texture.
Fry at 350 °F for 4–6 minutes until golden brown and internal temp reaches 165 °F.
Drain on rack; rest 2 minutes.
Make the Yum Yum Sauce
Whisk mayo, rice vinegar, honey, soy sauce, sriracha (if using), and final 1 Tbsp Yum Yum Blend
Assemble the Sandwich
Toast buns lightly.
Layer lettuce, tomato, fried chicken, and pickles.
Top with extra drizzle of sauce for presentation.
