Mother Sauce: Sauce Tomat

  1. In a medium to large pot, sauté your onions on medium to low heat until lightly brown.
  2. Add garlic and stir until the garlic becomes fragrant.
  3. Using a food mill with a medium coarse setting, mill your tomatoes directly into the pan with the onion and garlic (or you can mill prior to cooking like in the video).
  4. Add in basil, salt and pepper to desired taste.
  5. Cook on a low simmer for 45 minutes.
  6. Sauce is ready to be served or store to develop a derivative of for making another dish like shakshuka.
