Low and slow does the heavy lifting — Big Bad BBQ Ale and baking powder set the foundation, the smoker builds the depth, and a blast of high heat at the end does what every wing deserves: a snap.

Ingredients
-
2 lbs chicken wings
-
3 Tbsp Spiceology Big Bad BBQ Ale Seasoning
-
2 tsp baking powder
Directions
Pat wings completely dry with paper towels.
Toss wings with Big Bad BBQ Ale and baking powder until evenly coated.
Arrange on a wire rack and refrigerate uncovered for at least 4 hours.
Preheat grill to 425°F, setting up two heat zones: one side at medium heat (indirect) and the other at high heat (direct).
Place wings over the indirect, medium-heat zone. Grill, turning occasionally, for about 20 minutes.
Move wings to the direct, high-heat zone. Grill for 3–5 more minutes until skin is charred and crispy and internal temperature reaches 160°F. Apply glaze at this point if using.
Remove wings from heat and let rest for 10 minutes — carryover cooking will bring the internal temp to a safe 165°F. Season with your blend of choice and serve.
