Ingredients

1 tube croissant dough (I used the large size) or your go to pizza dough

1/4 cup butter

1/4 cup all-purpose flour

4 Tbsp diced onion

1 1/2 cup of cream or milk

3/4 cup grated mozzarella
-
1 1/2 tbsp Spiceology Black & Bleu
-
1 red pepper
-
1 yellow pepper
-
1 medium yellow onion
-
3-4 eggs
-
1/4-1/3 cup dried cured chorizo/salami or whichever meat you prefer

1/2 cup shredded mozzarella
-
Tomato and green onions (optional)

Note: Recipe is for a half sheet pan - ddouble this recipe for a large sheet pan.
Pre-heat your oven to 375°F or whatever your croissant dough suggests.
Make your cheese sauce, melt your butter and add in your onion, cook until onion is soft, about 2-3 minutes. Add in your flour and cook for 1-2 minutes then add in your cream or milk, stirring and being careful not to burn. If your sauce is too thick add in some more cream or water to thin. Mix in your cheese. Once melted add in Spiceology Black & Bleu seasoning, season with salt, mix and set aside.
Sauté your pepper and onions.
Scramble your eggs and cook them and set them aside.
Dice your cured chorizo into small cubes.
Roll out your croissant dough onto an oiled 1/2 sheet pan (double this recipe for a large sheet pan), making sure to seal then seams. Top with your cheese sauce, onions and peppers, eggs, chorizo, cheese and tomatoes if using. Bake for 15-17 minutes until dough is cooked and the top has some color on it.
Sprinkle with green onions and serve this for breakfast/brunch.
