Ground chicken gets a hit of Spiceology Black Magic Cajun Blackening Seasoning, sears up in a skillet, and tucks into toasted Hawaiian sweet rolls with a tangy lime-mayo lettuce slaw and salty feta. Ingredients
Meatballs
- 1 lb ground chicken
- 1 large egg
- ¼ cup panko bread crumbs
- 2 Tbsp Spiceology Black Magic Cajun Blackening Seasoning
- ½ tsp kosher salt
- 2 Tbsp neutral oil, such as avocado oil
Lime-Mayo Slaw
- 1 cup shredded iceberg lettuce
- ½ small yellow onion, thinly sliced
- 1 small Roma tomato, diced
- 3 Tbsp mayonnaise
- 1 Tbsp lime juice (about ½ lime)
- ½ Tbsp Spiceology Black Magic Cajun Blackening Seasoning
To Serve
- 12 Hawaiian sweet rolls, slider size
- ½ cup crumbled feta
Directions
In a large bowl, combine the ground chicken, egg, panko, 2 Tbsp Spiceology Black Magic Cajun Blackening Seasoning, and kosher salt. Mix with your hands just until evenly combined; overmixing makes them dense.
With damp hands, roll the mixture into 12 meatballs, about 1.5 oz each (a scant ¼ cup or about 3 Tbsp). Ground chicken is sticky, so wet hands are the move. For tidier meatballs, chill them on a plate for 15 minutes.
Heat the oil in a 12-inch skillet over medium heat until it shimmers. Add the meatballs with space between them (work in two batches if your skillet is smaller) and cook, turning every 2 to 3 minutes, until browned on all sides and 165°F in the center, 10 to 12 minutes. Lower the heat if the seasoning starts to scorch. Move to a plate.
While the meatballs cook, whisk the mayonnaise, lime juice, and ½ Tbsp Spiceology Black Magic Cajun Blackening Seasoning in a large bowl. Leave the lettuce, onion, and tomato on the side for now.
Slice the rolls in half horizontally. Wipe out the skillet and warm the rolls cut-sides down over medium heat for 1 to 2 minutes, in batches if needed, until lightly toasted.
Just before assembling, toss the lettuce, onion, and tomato in the lime-mayo dressing so the lettuce stays crisp. Spoon some slaw onto each bottom roll, nestle in a meatball, top with crumbled feta, and add the roll tops. Serve right away.
