Movie theater butter popcorn went to finishing school. This stovetop popcorn pops in oil infused with crispy garlic and rosemary, then gets tossed with Spiceology Brown Butter Parmesan Seasoning while it's still hot. Crispy garlic, lemon zest, and a rosemary sprig turn homemade movie theater popcorn into a garlic parmesan popcorn that looks like you tried much harder than you did. Consider it your go-to movie night snack, or an appetizer that happens to be popcorn.

Ingredients
Popcorn
- 3 Tbsp neutral oil, for infusing and popping (butter-flavored popping oil works great)
- 1 Tbsp neutral oil, for coating
- 3 garlic cloves, thinly sliced
- 1 sprig fresh rosemary, for infusing
- ½ cup popcorn kernels
- 1–2 Tbsp Spiceology Brown Butter Parmesan Seasoning, to taste
To Finish
- 1 lemon, zested, then cut into wedges
- 1 sprig fresh rosemary, for garnish
Directions
Prep first: slice the garlic about â…› inch thick, zest the lemon, then cut it into wedges. Set a large bowl next to the stove.
Add 3 Tbsp oil, the garlic, and 1 rosemary sprig to a 4–5 quart pot with a lid. Set over medium heat and cook, stirring often, for 3–4 minutes until the garlic is pale golden and crisp and the oil smells like rosemary. Pull the pot off the heat the moment the garlic starts to color. It keeps cooking in the hot oil and turns bitter fast.
Use a slotted spoon to move the garlic and rosemary to a paper towel. The garlic crisps up as it cools. Discard the cooked rosemary and leave the infused oil in the pot.
Return the pot to medium-high heat and add 3 test kernels. Cover and wait until all 3 pop, about 1–2 minutes. Add the remaining kernels in an even layer, cover with the lid slightly ajar so steam can escape, and shake the pot over the heat until the pops slow to 2–3 seconds apart, about 2–3 minutes. Take the pot off the heat.
Pour the popcorn into the large bowl. While it's still hot, drizzle with 1 Tbsp oil and toss to coat. Sprinkle on 1 Tbsp Spiceology Brown Butter Parmesan Seasoning and toss until evenly coated. Taste and add up to 1 Tbsp more.
Serve topped with the crispy garlic, lemon zest, and the rosemary sprig, with lemon wedges on the side for squeezing.
