Peak summer tomatoes don’t need much—they just need somebody to stay out of their way. Thick slices of heirloom tomato, flaky salt, black pepper, toasted white bread, and Duke’s whipped with nutty Brown Butter Parmesan into a mayo that catches every last drop of tomato juice.

Brown Butter Parmesan Summer Tomato Sandwich

Ingredients

  • ½ cup Duke’s Mayonnaise
  • 1 tablespoon Brown Butter Parmesan Seasoning

  • 4 slices white sandwich bread
  • 1 large Amish or heirloom tomato
  • Kosher flake salt, to taste
  • Freshly cracked black pepper, to taste

Directions

  1. Toast the white bread until golden and lightly crisp, while keeping the center tender.
  2. Slice the tomato into ¼- to ½-inch-thick slices. Season generously on both sides with kosher flake salt and freshly cracked black pepper.
  3. In a small bowl, whisk together the Duke’s mayonnaise and Brown Butter Parmesan Blend until evenly combined.
  4. Spread a generous layer of Brown Butter Parmesan mayo over one side of each slice of toasted bread.
  5. Layer 2 thick slices of seasoned tomato onto two pieces of bread.
  6. Close with the remaining bread, mayo-side down.
  7. Cut each sandwich in half and devour immediately.
