Tips from Chef Christian: This is a fairly straight forward approach to skewered bacon-wrapped shrimp. The key is not leaving the shrimp on the hot zone for too long. The bacon fat will cause flare ups and while one or two is a pleasant smoke and char flavor worthy of imparting, letting it get away from you will result in over cooked shrimp and bacon burn black.

Ingredients

1/4 cup Spiceology Candied Bacon Sriracha seasoning

2 lbs Tail-on Peeled and Deveined Jumbo Shrimp

1 pack Bacon

3-6 Stainless Steel Skewers
Directions
Pat shrimp dry and place in a large mixing bowl. Apply Spiceology Candied Bacon Sriracha seasoning and gently coat. Once coated, cover and refrigerate for ten minutes.
Remove from the fridge and wrap each individual shrimp in a single slice of bacon and skewer. Repeat this step placing 5-6 shrimp on each skewer until all shrimp are wrapped and skewered.
Preheat charcoal grill to 450 degrees with the coals off center stack on one side to give you a hot zone and a warm/indirect heat zone.
Place skewers over the hot zone and let sear on one side for 2-3 minutes or until a light char forms. Flip skewers and repeat the last step.
Move skewers off heat and let bacon finish cooking in the warm zone for 2 minutes. Make sure to cover the grill when finishing the shrimp in the warm zone.
Remove from the grill and let cool slightly. Enjoy. (And don't eat the tails lol.)
