This is the salad of the summer. It's basically that amazing Mexican elote street corn in salad form with a citrus kick from our Chile Margarita blend. Grilled corn on the cob gets a salty-herby glow up that's bright and light and the perfect summer side. Don't have time to grill up that corn? You can also use canned or frozen in a pinch. Chile Margarita Elote-Inspired Corn Salad

Ingredients

  • 4 cobs of corn, husked (can also be made with raw corn or canned corn if you’re in a rush)

  • 2 Tbsp Spiceology Chile Margarita blend

  • 3 Tbsp cotija cheese

  • 1/4 cup (roughly) mayonnaise

  • 2 Tbsp cilantro, finely chopped

  • 2 limes, juiced and zested

  • Couple dashes of hot sauce, optional

  • Olive oil, as needed

Directions

  1. Turn your grill onto high heat.

  2. Add some olive oil to your corn and seasoning it with the Chile Margarita seasoning.

  3. Grill for 5-7 minutes, just to get some nice color on your corn, let cool for 5 minutes.

  4. Carefully cut your corn off of the cob and place into a bowl. Add in your mayo, cotija cheese, lime juice, zest, cilantro, and hot sauce, if using.

  5. Mix everything together, top with some more Spiceology Chile Margarita, cotija and cilantro and enjoy your new favorite summer salad.
