Ingredients

8 oz thick-cut bacon, cut crosswise into 1/4-inch strips

1 large yellow onion, finely diced

2 garlic cloves, minced

1 tsp Spiceology Cowboy Campfire Blend

3 Tbsp brown sugar

2 Tbsp apple cider vinegar

2 Tbsp brewed coffee (or water)

1 Tbsp maple syrup

1 large sweet onion, cut into 1/2-inch rings

1 Tbsp neutral oil

1 tsp Spiceology Cowboy Campfire Blend

4 all-beef hot dogs, snappy casing

4 split-top or potato buns

2 Tbsp butter, softened

1 tsp Spiceology Cowboy Campfire Blend, to dust (divided)

Directions
Bacon jam: In a cold skillet, render the bacon over medium heat until crisp, 8-10 min. Spoon off all but ~1 Tbsp fat. Add the onion and cook until soft and golden, 6-8 min. Add the garlic and Cowboy Campfire Blend; cook 1 min.
Add brown sugar, vinegar, coffee, and maple syrup. Simmer, stirring, until glossy and jammy, 8-10 min. Pull from heat — it thickens as it cools.
Charred onions: Toss the onion rings with oil and Cowboy Campfire Blend. Char on a hot griddle or grill, 3-4 min per side, until edges blacken and centers soften. Roughly chop and set aside.
Dogs: Score the franks lightly on the bias and dust with a pinch of Cowboy Campfire Blend. Griddle over medium-high heat, turning, until blistered and charred, 4-5 min.
Reduce heat to medium. Butter the cut faces of the buns and toast on the griddle until golden, 1-2 min. Dust the toasted interior with a pinch of Cowboy Campfire Blend.
Build: bun, hot dog, a generous smear of warm bacon jam, then a pile of charred onions. Finish with one small pinch of Cowboy Campfire Blend over the top.

Chef's Tip
Bacon jam keeps up to 1 week refrigerated — it's also a cheat code on burgers, grilled cheese, and eggs.
Coffee adds depth and balances the sweetness. It won't read as 'coffee' in the finished jam.
No griddle? A cast iron skillet over medium-high chars onions and dogs just as well.
