Cowboy Candy Grilled Peach and Tomato Caprese with Cowboy Candy Summer Sauce

Call it a Summer Sauce, but this here’s porch-sittin’ flavor. Sweet heat from Cowboy Candy melts right into grilled peaches, sun-warmed tomatoes, and soft mozzarella—like a Southern picnic with an Italian twist.

Ingredients
- 5 peaches pitted and quartered

1/4 cup Cowboy Candy

1 Log of BelGioioso Whole Milk Sliced Mozzarella (chunked and quartered)
- 6 vine ripened tomatoes (chunked and quartered)
- 1/2 cup Italian Parsley (fine chopped)
- 1/4 cup sweet basil (fine chopped)
- 1/2 cup green onion with whites (sliced)
- 1/8 cup fine diced jalapeno (seeded)
- Juice of 3 meyer lemons
- 2/3 cup Rice Vinegar

2 tbsp Cowboy Candy
- 1/4 cup Graza Drizzle

½ cup Graza Sizzle

Cowboy Candy Summer Sauce
- Combine all ingredients in a mixing bowl and whisk thoroughly.
- Set aside and rest for 10 minutes.
Grilling
- Preheat Grill to 475 degrees.
- Add 1/4 cup of Cowboy Candy to Ziploc bag of chunked fresh peaches and gently toss to coat.
- Dump seasoned peaches on the grill and drench in graza sizzle. Close the grill and sear for 2 minutes. Open the grill turn once, drench again in sizzle and close the lid. Open the lid and remove peaches from the grill to a cooking sheet. Allow them to cool for 5 minutes.
- Assemble salad, quartered tomatoes, quartered slices of BelGioso mozzarella, grilled peaches, and smother in Cowboy Candy Summer Sauce.
- Serve immediately.
Recipe Note
This recipe is addicting in the best way. Cowboy Candy Summer Sauce also doubles as a green goddess if you add a bit of mayo and blend it till smooth in a food processor. Best enjoyed with other like minded flavor friends.
