This beer brat bites recipe turns two bratwurst links and a pour of beer into a plate of caramelized, cocktail-pick-ready snacks. The brats simmer in Garage Beer, get sliced into coins and seared, then are tossed hot in Spiceology Chile con Limon Seasoning for a savory, tangy, lightly spicy bar snack. It's proof that great party food doesn't need a big spread, just a saucepan, a skillet, and a handful of cocktail picks. Consider this your go-to beer brat bites recipe, game day or not.

Ingredients
- 2 bratwurst links
- 12 fl oz Garage Beer
- ¼ yellow onion, sliced
- 1 tsp unsalted butter or neutral oil
- ½ tsp Garage Beer Chile Lime Spice Blend, plus more to finish
- 1 Tbsp pickled red onions, minced
- 1 tsp fresh chives, chopped
Directions
Braise: Add the bratwurst, Garage Beer, and sliced onion to a small saucepan. Bring to a gentle simmer over medium-low heat and cook 10–12 minutes, until the bratwurst reaches an internal temperature of 160°F.
Slice and Sear: Remove the bratwurst with tongs and pat dry. (The onion has done its job flavoring the braise; discard it or save it for another use.) Rest 2–3 minutes, then slice into ¾-inch coins, straight or on the bias. Heat the butter or oil in a skillet over medium-high heat. Add the brat pieces cut-side down in a single layer and sear 2–3 minutes, until deep golden brown and caramelized.
Season and Serve: Toss the hot brat bites with the Spiceology Chile con Limon Seasoning. Transfer to a plate and top with the pickled red onions and chives, plus a light extra dusting of seasoning if desired. Serve warm with cocktail picks.
