Ingredients

8 boneless, skinless chicken thighs, cut into 1-inch pieces
1/4 cup plain Greek yogurt
Juice from 1 lemon
2 Tbsp olive oil
1 tsp honey
1–2 Tbsp Greek Freak seasoning blend
Metal skewers, or wooden skewers soaked in water for 20 minutes

Pitas (warmed over the fire)
Greek salad
Hummus
Tzatziki
Rice, seasoned to taste
Directions
Combine the chicken with the yogurt, lemon juice, olive oil, honey, and Greek Freak seasoning in a sealed container. Marinate for at least 2 hours, or overnight in the fridge or cooler for best flavor. (Greek Freak is low in sodium but has enough salt to marinate the chicken as is.)
When ready to cook, thread the chicken onto metal skewers, or wooden skewers that have been soaked in water for 20 minutes to prevent burning. Tip: don’t forget to pack the skewers!
If cooking over a campfire, start your fire 30–40 minutes ahead of time so it burns down to hot coals before you begin cooking. If using a BBQ or propane grill, preheat to medium-high heat (about 400°F) instead.
Place the skewers on a fire grate over the coals (or on the preheated grill) and cook for 15–20 minutes, flipping every ~5 minutes for an even char on all sides, until the chicken reaches an internal temperature of 165°F.
While the chicken cooks, prepare your sides: warm the pita, portion out the rice, and set out the Greek salad, hummus, and tzatziki.
Once the chicken is cooked, remove it from the skewers and serve alongside the rice, Greek salad, pita, hummus, and tzatziki. Enjoy!
