Greek Freak Mini Pizzas

Ingredients

  • 1 (13.8 oz) tube refrigerated pizza dough
  • ½ cup pizza sauce
  • 1 Tbsp Spiceology Greek Freak Seasoning, plus more to taste
  • ¾ cup shredded mozzarella (or a mozzarella-provolone mix)
  • ¾ cup diced toppings (pepperoni, fully cooked sausage, bell peppers, onions)
  • 1 tsp olive oil, for greasing
  • 2 Tbsp finely grated Parmesan cheese

Directions

  1. Preheat the oven to 375°F. Lightly brush a standard 12-cup muffin tin with the olive oil.

  2. Stir the Greek Freak Seasoning into the pizza sauce and set aside so the herbs can soften.

  3. Unroll the pizza dough onto a lightly floured surface and roll it to about â…› inch thick. Cut 4-inch rounds, re-rolling the scraps as needed to get 12 total.

  4. Press one round into each muffin cup, easing the dough up the sides to form a shallow cup.

  5. Spoon 2 tsp of the seasoned sauce into each cup, then add 1 Tbsp cheese and 1 Tbsp diced toppings.

  6. Bake 15–18 minutes, until the dough is golden brown and the cheese is bubbly.

  7. Cool in the tin for 5 minutes, then run a thin knife or offset spatula around each pizza and lift it out.

  8. Finish with the parmesan and serve warm.
