Ingredients

2-3 cups, already cooked quinoa, chilled

1 rotisserie chicken, shredded

3-4 mini cucumbers or 1 large
-
1 pint of cherry tomatoes

1 red or green bell pepper
-
1 small red onion
-
2 Tbsp Spiceology Greek Freak seasoning
-
6-8 olives (or however many you prefer)
-
3 pepperoncini peppers
-
1/2 cup feta cheese
-
3/4-1 cup of Greek dressing

Optional, 1/4 cup mayo
Directions
Shred your rotisserie chicken (I didn’t use all of the chicken for this recipe).
In a large bowl add in your leftover quinoa.
Dice all of your veggies to your liking and add into the bowl along with your chicken.
Break up your feta, add in your Spiceology Greek Freak, Greek dressing and mayo if your using (the mayo adds a bit of a richer flavor) and mix together this incredibly easy cold salad for a crowd, or your meal prepped lunch/dinner!
