Cheese tortellini bakes in a bold, herby tomato-cream sauce built on Spiceology Greek Freak Seasoning, with a Parmesan-Greek Freak breadcrumb topping that turns bubbling and golden in the oven. A one-dish weeknight main that reheats beautifully for lunches all week.

Ingredients
- 900g fresh, refrigerated four-cheese tortellini
- 1 Tbsp olive oil, plus more as needed
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 1 zucchini, sliced into half moons
- 1/2 pint cherry tomatoes, halved
- 3 Tbsp tomato paste
- 2 cups crushed tomatoes (or your favorite pasta sauce)
- 1.5 cups chicken stock (or vegetable stock, for a vegetarian version)
- 3/4 cup heavy cream
- 4 Tbsp Spiceology Greek Freak Seasoning, divided
- Kosher salt and black pepper, to taste
- 4 oz fresh mozzarella (about half an 8 oz ball), torn into pieces
1/2 cup panko or plain bread crumbs
1/4 cup grated Parmesan, plus more for serving
Directions
Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish with olive oil.
Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and zucchini; sauté 3–5 minutes, until just starting to soften. Add cherry tomatoes and cook 1–2 minutes more, just until they begin to blister.
Push the vegetables to one side of the pan. Add tomato paste to the cleared space and cook, stirring, 1–2 minutes, until it darkens slightly, then stir it into the vegetables. Add crushed tomatoes and chicken stock, bring to a simmer, and cook 3–4 minutes to let the flavors come together.
Stir in heavy cream and 3 Tbsp Greek Freak Seasoning. Season with salt and pepper to taste.
Add tortellini to the sauce and stir to coat evenly. Transfer to the prepared baking dish, spreading into an even layer.
In a small bowl, combine bread crumbs, remaining 1 Tbsp Greek Freak Seasoning, and Parmesan. Nestle mozzarella pieces throughout the tortellini, then sprinkle the seasoned bread crumbs evenly over the top.
Cover tightly with foil and bake 15 minutes. Uncover and bake 12–15 minutes more, until the sauce is bubbling at the edges and the topping is golden brown.
Let rest 5 minutes, then serve with extra grated Parmesan. Keeps well for meal prep throughout the week.
