Ingredients

4 slices good-quality sourdough or rustic bread =

8 oz fresh mozzarella, sliced (about half a fresh mozzarella ball)

1 large heirloom tomato, sliced
-
Fresh basil leaves
-
2 Tbsp oil or softened butter
-
Balsamic glaze (for finishing)

1 ripe avocado
-
1/4 cup sour cream or Greek yogurt
-
1 Tbsp lime juice
-
2 Tbsp Spiceology Candied Bacon Sriracha
-
Salt, to taste

Directions
Make the Candied Bacon Sriracha Avocado Cream
In a small food processor or blender, combine the avocado, sour cream (or Greek yogurt), lime juice, Candied Bacon Sriracha, and a pinch of salt.
Blend until smooth and creamy. Taste and adjust Candied Bacon Sriracha, lime, or salt as desired.
Assemble the Sandwich
Spread Candied Bacon Sriracha avocado cream on one side of each bread slice.
On two slices, layer fresh mozzarella, tomato slices, and basil leaves. Season tomatoes with a pinch of salt and pepper.
Top with the remaining bread slices (Candied Bacon Sriracha avocado cream side facing in).
Grill the Sandwich & Serve
Brush the outer sides of the sandwiches lightly with olive oil or butter.
Heat a grill, griddle, or panini press over medium heat or use the oven to bake and broil your sandwich.
Grill the sandwiches for 3-4 minutes per side, pressing gently, until the bread is golden and crispy and the cheese is melty.
Slice in half, drizzle with balsamic glaze if desired, dust with Candied Bacon Sriracha and serve warm with extra avocado cream on the side for dipping.
