Ingredients

2 cups English cucumbers, sliced into half moons

3 cups Campari or Roma tomatoes, cut into wedges

1 large red onion, finely julienned

1/8 cup fresh parsley, chopped

1/2 cup apple cider vinegar

1/4 cup extra virgin olive oil
Directions
In a medium bowl, whisk together the Hot Pickle Seasoning, apple cider vinegar, and olive oil until fully emulsified.
Place the julienned red onions in a small bowl. Pour the dressing over the onions and fold gently to coat.
Let sit at room temperature for 20 minutes to soften and lightly pickle.
In a large mixing bowl, combine the cucumbers and tomatoes. Add the marinated onions along with all of the dressing. Gently toss to combine, ensuring everything is evenly coated without breaking down the tomatoes.
Transfer to a serving dish. Finish with chopped parsley and a light pinch of additional Hot Pickle Seasoning.
