Ingredients
-
2 lb Chicken Breasts
-
1 cup and 2 Tbsp Acid League Miso Caesar Dressing (available at Target)
-
4-6 Sourdough Bread Slices
-
1 Tbsp Spiceology Smoky Honey Habanero
-
2 cups Celery (thinly sliced on bias)
-
2 cups Red Seedless Grapes
-
4 Parmesan Crisps (broken into small bite-sized pieces)
-
2 Tbsp Neutral cooking oil
Directions
In a small Tupperware container, combine 1 cup of Acid League Miso Caesar Dressing with raw chicken breasts. Massage dressing into the chicken breasts, cover, and refrigerate. Marinate for 4-8 hours.
While chicken is marinating, halve the seedless red grapes and place into a medium-sized mixing bowl. Add 2 Tbsp of Spiceology Smoky Honey Habanero and mix thoroughly to coat. Place in a container with lid, seal and refrigerate until chicken is grilled.
Preheat the grill to 450 degrees.
Remove chicken from the marinade and immediately place on grill. Grill chicken to an internal temp of 160 degrees and remove and let it rest to 165 degrees at its thickest part of the breast meat.
While the chicken is resting, apply a small amount of neutral cooking oil to all sides of bread and lightly grill on all sides until golden brown.
Slice chicken into thin strips and assemble on toast with 2 Tbsp more of Acid League's Miso Caesar Dressing. Top with celery, parmesan crisp crumbles, and Smoky Honey Habanero-marinated split grapes.
