Citrusy, bubbly, blueberry. Compote may not be a jelly, but with Pink Peppercorn Lemon Thyme, the herbaceous and tangy blueberry compote will be jammin' with flavor. Put it on everything from brie or goat cheese grilled cheese, to cheesecake, to roasted pork loin with mustard cream sauce. This is a condiment worth keeping.

Ingredients

4.5lbs Blueberries (fresh or frozen)

2 tbsp Pink Peppercorn Lemon Thyme All-Purpose Seasoning

1.5 Cups Prosecco

1.5 cups White Sugar
Directions
In a large Dutch oven, combine all ingredients and bring to a boil stirring often.
Reduce heat to medium low and simmer for 25 minutes and stir often.
Transfer to clean and sterilized mason jars, seal and refrigerate until ready to use.
Recipe Note
This condiment is quite delish on sweet and savory things. But my clutch move is putting it on bbq pulled pork sandwiches. Don't knock it till you try it.
